Classic chicken soup, no noodles. Celery, onions, carrots, chicken, and thyme in a super gelatinous homemade stock. Perfect for this obscenely cold weather and calming for my fraught nerves.
Chop veggies into equal sized dices, sautee in olive oil until soft but not brown. Add all other ingredients, bring to a simmer and let simmer over low heat about 20 mins. Super easy!

4 stalks celery
1 half onion
3 carrots
1tsp poultry seasoning
1tsp dried thyme
1cup cooked chicken, chopped
2 qt chicken stock
Salt & pepper to taste
